Water is a chemical substance, a stable triatomic body represented by a bent molecule H2O revealing an angle of 104°5 between its two O-H covalent bonds. This inorganic compound, colorless, odorless and tasteless is a liquid at ordinary temperature and normal atmospheric pressure, characterized by the existence of hydrogen bonding, which justifies a wide temperature range between solidification at 0°C and vaporization at 100°C.

This liquid also shows significant surface tension, which explains the easy formation of droplets in the presence of air and easy retention in capillary ducts, particularly soil pores. The polar structure of the molecule, the electronegative oxygen providing the negative pole and the side of hydrogen atoms forming a positive pole, explains that water is a poor solvent in liquid state for non-polar compounds like hydrocarbons, and an excellent solvent for solids with ionic bonds, releasing their electrolytes as well as hydrogen-bonded compounds. The water molecule participates in hydrolysis and hydration reactions, but also in various redox reactions, revealing reactivity towards oxidants or sufficiently strong reducing agents. In many uses, the term water is used in the restricted sense of water in liquid state, or to designate a dilute aqueous solution (fresh water, drinking water, seawater, etc.) or a suspension (lime water, fatty water, wastewater, etc.) Water is ubiquitous on Earth and in the atmosphere, in its three states, solid (ice), liquid and gaseous (water vapor).
